Ingredients:

  • 1/2 pound chicken liver (or beef liver)
  • 1/2 pound bacon
  • 1 cup whole wheat flour (substitute with coconut or almond flour for a grain-free option)
  • 1/2 cup cornmeal (omit if using a grain-free option and replace with suitable alternative)
  • 2 eggs
  • 1/4 cup water (or enough to form a thick batter)
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove from heat and let it cool, then chop into small pieces. Reserve the bacon grease.
  3. Puree the liver in a food processor until smooth. If you don’t have a food processor, finely chop the liver.
  4. Mix the dry ingredients in a large bowl – the flour and cornmeal (or their substitutes if you’re going grain-free).
  5. Combine the wet ingredients in another bowl. Add the pureed liver, eggs, olive oil, and water. Mix well until combined.
  6. Add the cooked, chopped bacon to the wet ingredients, including a tablespoon of the reserved bacon grease for extra flavor.
  7. Combine wet and dry ingredients, and stir until a thick batter forms. If the mixture is too dry, add a little more water; it should be malleable but not runny.
  8. Spread the mixture onto the prepared baking sheet. You can drop it by teaspoons for small, bite-sized treats or spread it into a thin layer and cut it into pieces after baking.
  9. Bake for about 15 to 20 minutes or until the edges start to brown. If you spread the batter to cut post-baking, score the treats with a knife halfway through baking to make breaking them apart easier.
  10. Cool the treats in the pan before removing them. Cut into training-sized pieces if you baked a single sheet.
  11. Store the treats in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
